How to Make a Boxed Cake Fancy



Oh heyyyyyy!! Just popping in with a quick little tip on how to fancy up your birthday cakes!

It was Jeff's birthday over the weekend, and I decided birthday cake was just what we needed. Yes, a whole cake for two people. I don't see the problem.

So how do you make your boxed cake mix cakes taste just that much better? Sub out the oil for melted butter, and sub out the water for milk. Use the exact same amounts in the original recipe. It is such an easy switch, and makes your cakes richer and more moist, and taste like you put a whole lot more effort in than just stirring four ingredients together!

It also works on brownie mixes too. Give it a try, you'll never look back.

Oh, and the #1 rule passed down for boxed cakes from my mama? Make the cake from a mix... but the frosting from scratch! Homemade frosting is just next level, and it makes any cake that much better. Plus it's super easy to make - here's the recipe I used! Yes, to my mother's horror, with salted butter. I'm very pro.

28!

Oh hey y'all, today I turn 28! I was going to go all out and get dressed up in a fancy dress and maybe hold balloons or something, but instead I decided to show a much more realistic outfit for what I'll actually probably be wearing today - jeans and some comfy loungewear. The universe declared a two week birthday for me this year (went to a surprise birthday dinner last Monday and there's another party coming up this weekend) so tonight Jeff and I are keeping things pretty low key and just going out to RM Champagne for dinner tonight.

While 27 was a great year, it felt like a huge build up - we were planning our wedding and not going on big trips to save for our honeymoon and getting excited about my sister having a baby, and 28 is the year when those things will finally happen. Probably all within a two week period. 28 feels like an age where I finally will really feel like a grown-up (because "it's like, almost 30").

It's my birthday!

Oh hey, it's my birthday!  Instead of writing an "It's my birthday" post, here's a few photos from the medal stand photo booth from my Olympics theme party this weekend:



 



I made the stands out of some plastic step stools I found at Home Goods and some metallic poster board from Michael's.  The poster board was double sided: gold and silver.  Since there was no bronze, I painted one of the gold sheets.  Then I cut out pieces of poster board and used some spray glue to attach them to the step stools.  I printed out the numbers and used them as stencils on the scrap pieces of poster board, then attached them using some more spray glue.  And voila!  Quick and cheap medal stand.


Tonight Jeff and I are going to RPM to celebrate some more.  I've never been so I'm super excited.  Yaaaaaaaay birthday!

Birthday Wishlist

Oh hey you guys, I'm turning 27 next week!! Which means my (hopefully) amazing Olympics birthday extravaganza is this weekend.  I.am.so.excited.  Some people are always birthday people, but I tend to go back and forth. Last year I didn't do anything for my birthday, just a quiet dinner with Jeff.  The year before I went crazy and hit the town with 50 of my closest friends.  For my 21st, which should have been crazy, I stayed in and studied (I had a midterm the next day).  This year though, I'm going big.

My mom has been on me since about two days after Christmas to come up with a birthday wishlist.  I've been having a hard time coming up with these lately, which you would think would be the opposite since I'm always posting about things I want on here.  I think the issue is that if I really want something, unless it's really expensive, I'll just buy it myself.  I've been consciously holding back a little this month so as to leave something on my wishlist.  Here are a couple of the things in my brain right now:

26!

Oh hey, today is my birthday!

Birthdays always remind me of poor Jessica Simpson on Newlyweds, talking about how old 23 is.  Oh Jessica, what would you think of me now at 26?  


I'm excited for 26.  I think it's going to be a great year.
